Heidi Richter, a Vancouver Island food blogger who loves foraging, gardening, and Star Wars is the voice behind the beautiful plant-based blog The Simple Green.

You will find an abundance of delicious wholesome plant-based recipes inspired by a deep love for organic gardening and a reverence for the seasons. Whether you eat plant-based or not there is something for everyone at The Simple Green. Many of the recipes are gluten free and free from refined sugars, save for the odd decadent dessert.

What I love most about Heidi’s plant-based food blog is the awesome photography, simple design, absence of irritating advertising banners, and above all, the love and respect for seasonal, organic home-grown produce.

Quick Pickled French Breakfast Radishes | The Simple Green

Like many food gardeners, I often succumb to the feast-or-famine syndrome. Especially when it comes to radishes. I always sow too many. Leaving me with a glut and then with weeks without any.

This recipe is an easy way to save radishes from the garden, when they are at their prime, for the famine days! Heidi says the result is tart, sweet and salty with a great crunch. The pickling process needs a minimum of 8 hours, but the prep is quick and they make an easy condiment to keep on hand for sandwiches or salads!

The ingredient list is simple:

  • Radishes
  • Peppercorns
  • White vinegar
  • Sugar
  • Sea salt.
  • Optional ingredients are: garlic cloves, fresh dill, and mustard seed.

Green Goddess Sandwich with Creamy Herb ‘Mayo’ | The Simple Green

It’s no secret, I’m hooked on herbs, and Heidi’s vegan-friendly mayo recipe features three of my favourite herbs: chives, dill, and parsley.

The Green Goddess sandwich is perfect for picnics and patio lunches. With loads of nutritious greens and a tangy vegan herb mayo, you can’t go wrong! This recipe makes extra herb mayo which can also be made ahead of time and will keep in the fridge for up to 4 days.
